Yes - No Man's Sky has full crossplay: PC, PlayStation, Xbox, Switch 2 and the new iOS version all share one universe. It's on by default, free, and takes about two minutes to set up a cross-platform session.
Quick answer: crossplay is already enabled for most players. To play together, swap No Man's Sky Friend Codes in the Network tab, add each other, then join the session - same game mode required (Normal, Survival or Permadeath).
Turn on crossplay
